Pineberry Sorbet

Prep Time: 10 minutes | Cook Time: 4 hours

Ingredients

  • Sugar - 200g

  • Water - 1 cup or 236mL

  • Corn Syrup - 1/4 cup or 85g

  • Pineberries - 2 cups

  • Lemon (lemon juice) - 1 tbsp or 15mL

  • Vodka - 2 tbsp or 30mL

Method

Method

  1. Bring sugar, water, and corn syrup mixture to a simmer or until entire contents are well dissolved.

  2. Add pineberries to blender and blend until pureed.

  3. Strain pineberries through a fine mesh strainer.

  4. Add in lemon juice.

  5. Pour entire mixture into ice cream maker.

  6. Once mixing has began, immediately add in vodka to help the mixture acheive optimal consistency and prevent over freezing while in the freezer.

  7. Freeze mixture for 2-3 hours

  8. Once frozen to desired consistency, scoop and enjoy.
