Cinnabon Rolls - Orange Frosting

Ingredients

Dough:
  • 450g or 3.5 cup All-Purpose/Bread Floud

  • 100g or 1 cup Sugar

  • 5g or 1.5 tsp Instant Yeast

  • 8g or 1 .75 tsp Salt

  • 1g or .25 tsp Baking Soda

  • 115g or 1 stick Butter

  • 2 eggs

  • 1 egg yolk

  • 115g or .5 cup warm Buttermilk

Filling:
  • 115g or 1 stick unsalted Butter (softened)

  • 150g or .5 cup Brown sugar

  • 20g or 2.5 tbsp Cinnamon

  • 1g or .25 tsp Salt

Frosting:
  • 115g or .75 cup Cream Cheese (softened)

  • 10g or 2 tsp Orange Extract

  • 140g or about 1.25 cup Powdered Sugar

  • .5 to whole Orange Zest

Method

Dough
  1. In the bowl of a stand mixer, whisk together all-purpose flour, granulated sugar, and fine sea salt to evenly combine.

  2. Add softened unsalted butter and mix until fully incorporated.

  3. In a separate container, whisk together lukewarm buttermilk and instant yeast until combined.

  4. Using the dough hook attachment on medium-low speed, add the yeast mixture, whole eggs, and egg yolk to the dry ingredients. Mix for 2–3 minutes until the dough starts to come together.

  5. Transfer the dough to a lightly floured work surface and knead for about 1 minute or until smooth.

  6. Place the dough into a greased bowl, cover with plastic wrap, and let it rise in a warm place for 90 minutes, or until doubled in size.

Filling
  1. While the dough is rising, mix together brown sugar, muscovado sugar, and ground cinnamon in a small bowl. Set aside.

  2. Once the dough is ready, transfer it to a lightly floured surface and roll it out into a large rectangle (approximately 18x12 inches).

  3. Spread softened unsalted butter evenly across the entire surface of the dough. Sprinkle the cinnamon sugar mixture evenly over the butter.

  4. Starting from the bottom edge, tightly roll the dough into a log. Slice the log into 2-inch thick segments using a sharp knife or unflavored dental floss.

  5. Grease a 9x13-inch baking dish and arrange the sliced rolls in the dish, leaving a small amount of space between each roll. Cover the dish with plastic wrap and let the rolls rise at room temperature for 30–45 minutes, or overnight in the fridge until puffed.

Baking
  1. Preheat the oven to 350°F (190°C). Cover the dish with foil and bake the rolls for 45 minutes, or until golden brown and cooked through.

  2. Remove the foil and bake for another 15 minutes. Let the rolls cool in the baking dish for 15 minutes.

Frosting
  1. In a medium bowl, beat together cream cheese and powdered sugar until smooth.

  2. Gradually whisk in orange extract and orange zest until fully incorporated.

  3. Drizzle the frosting generously over the warm cinnamon rolls.

Serve
  1. Serve immediately and enjoy your cinnamon rolls!
